- Firstly wash thoroughly and chop all the veggies - potatoes, cauliflower and carrots now add one cup peas keep aside.
- Heat oil in a pan and add chopped onions. Keep frying on low flame.
- Meanwhile, in mixer ginder add garlic cloves, green chillies, turmeric powder and coriander seeds.
- Now grind it without adding water first then add 1 tbsp water and grind again.
- Now in the same grinder jar add a full big bunch of coriander leaves (Use one full bunch it gives awesome Taste and wash it 3-4 times thoroughly). Now grind it to form a smooth green Puree.
- Now onions are pink add this green puree in pan and increase the flame.
- Cover the pan with lid and let it cook for 4-5 mins on high flame.
- Now remove the lid and start stirring the green masala till it starts leaving the pan.
- Add all the veggies in green masala. Mix well, cover and let the veggies cook on low flame for 10 mins.
- Now after 10 mins add 1 cup water by rinsing the ginder in which green masala was pureed.
- Add salt as per taste again cover and cook on low flame for 20-25 mins. Keep stirring in between
- After 25 mins check if potatoes and cauliflower are tender and are completely cooked.
- Adjust water and salt as per one's taste.
