- Dice tomatoes, onion and mango. Shred carrot. Chop cilantro.
- Squeeze limes and orange.
- In a pan boil water with salt and garlic. Place the fish in pan until they appear white in color.
- Chop tilapia into bite size chunks.
- Put tilapia in the lime and orange juice. Season with pepper, salt, and garlic. You can add a pinch of oregano and a bit of jalapeño juice to add flavor. Let it sit for 30 minutes.
- Mix everything together. Add salt to taste.
Con este calor que se está sintiendo lo único que se me antoja son preparaciones frías y ligeras. Creo que he comido más ensaladas de las que puedo contar o de las que recuerdo, los días que se me antoja algo fresco pero más sustancioso y acidito recurro al ceviche de pescado ya que es demasiado fácil de preparar y además queda delicioso. El ceviche de pescado de Ramón es parecido a la receta del ceviche ecuatoriano de mi amiga Mafi, una de las diferencias es que él le agrega ajíes o chiles picantes (cortados) y dientes de ajo para infusionar un poco de sabor picante al ceviche - en realidad no hacen que el ceviche sea picoso, solo le da más sabor al pescado. Una combinación de camarones, pescado fresco y almejas, todo un levanta muertos. Ceviche al estilo panameño solo en Delicioso.
