  7. Make ready 1 jar (28 oz) crushed tomatoes
  8. Prepare 1 can black beans, drained & rinsed
  9. Get 1 can kidney beans, drained & rinsed
  10. Get 2 tbsp chili powder
  11. Take 2 tbsp cumin
  12. Take 2 tsp oregano
  13. Take to taste Salt & pepper
  14. Get Olive oil
  15. Take 1 avocado, diced
  16. Get to taste Shredded cheese
  17. Take pieces Tortilla chips, broken into small
  18. Take to taste Sour cream
  19. Take Chicken stock (optional)

Instructions to make Turkey & veggie chili:
  1. In a large pot, heat about 2-3 tbsp olive oil. Add onion and zucchini and cook until almost done.
  2. Add chili powder, cumin and garlic, stir well and cook for just a couple minutes to release flavors.
  3. Remove onion/zucchini mix and set aside. Add turkey to same pot and cook until browned.
  4. Add onion/zucchini mixture back to pot. Add tomatoes, black beans, kidney beans, corn, spinach, oregano and salt & pepper. Stir well.
  5. If chili doesn't look soupy enough (not enough liquid) add some chicken stock until desired consistency is reached. Note: be careful not to add too much as chili gets more soupy as it cooks.
  6. Bring to a boil, then turn heat down to low, cover and cook for 20 minutes.
  7. Top with shredded cheese, sour cream, avocado and tortilla chips.
